Shepherd’s Purse and Tofu Soup

荠菜豆腐羹 | jì cài dòu fu gēng | Makes 4 servings

My parents emigrated from China to Oregon for graduate school. There, with their more experienced foraging friends, they’d often go for hikes and forage shepherd’s purse, a distinctively fragrant, grassy weed, for a taste of home. It pairs well with pork (a classic Shanghai wonton mix is shepherd’s purse with pork, see Shanghai Big Wontons). Slivers of pork add depth and flavor to this soup, but it could easily be made vegetarian by omitting the pork—shepherd’s purse is the true star. To elevate the presentation, chefs with excellent knife skills slice tender tofu into impossibly thin slivers, which then float on the surface of the soup, a beautiful mosaic of green and white. My rudimentary knife skills limit me to cubes of tofu, but I love the texture of tofu in this soup regardless of presentation. Shepherd’s purse is hard to find fresh (unless you’re an expert and knowledgeable forager), but it’s easily found frozen in Chinese supermarkets.
